Careful selection of grapes with spontaneous development of the noble variant of the fungus Botrytis cinérea, providing a distinct base of acidity and complexity. Light and precise vertical pressing, followed by clarification and fermentation in small stainless steel tanks. End of fermentation and aging on fine lees in stainless steel tanks and in used Hungarian oak barrels.
